Did Someone Say Banoffee?

This week in The A Department kitchen we got a little lazy and decided to concoct a recipe with minimal effort hoping for maximum taste! Let me tell you – we succeeded! What we came up with was an Eat Clean Raw Banoffee Pie that is simply delish!  This little clean cheat is made up with three layers of goodness simple to whip up and ready in just minutes. Give it a go this weekend and let us know what you think.

 

What You Need:

BOTTOM LAYER:

1 Cup Soaked Dates

3 Cups Mixed Raw Nuts

Pinch of Himalayan Pink Salt

MIDDLE LAYER:

1/2 Cup Coconut Oil

1/2 Cup Agave

1 Cup Soaked Dates

1 Tblsn Almond Butter

TOP LAYER:

2 bananas

1 Cup Pecans

 

For the bottom layer blitz nuts in food processor (We used walnuts, cashews, hazelnuts and almonds.)

Add dates a few at a time and blend till well combined.

Spread the sticky mixture into a pie dish or tin and smooth down with a spatula.

For the “carmel” or middle layer combine coconut oil, agave and dates in food processor. Add almond butter and blitz.

Spread “carmel” over the bottom layer that has already been prepared.

Next slice bananas and layer over the caramel.

Blitz pecans in the food processor and sprinkle over top of bananas.

Push pecans and bananas downwards into the caramel layer to solidify the top layer.

Serve with Greek Yoghurt or whipped coconut cream and a sprinkle of raw cacao.

Prepare to have your tastebuds tickled!
