Salmon Skewers

What You Need: 

  • Courgette
  • Peppers
  • Fresh Salmon Fillets

 

For Sauce:

  • 6 Tablespoons Light Soy Sauce
  • 3 Tablespoons Honey,
  • 2 Finely chopped Garlic Cloves
  • 1 Inch finely chopped Ginger

 

What To Do: 

Cut fresh salmon into 1-2 inch sections, do the same with peppers and courgette.

In a bowl mix together ingredients for the sauce

Add the salmon and veg and mix well together.

Place in fridge for 30mins.

Soak wooden skewers in cold water for 10mins to stop them burning when cooking.

 

30 Minutes Later….. 

Build your skewers with the marinated ingredients.

Place in griddle pan on medium to high heat or baking tray in oven on medium to high heat.
Cook for 8 to 10 minutes turning occasionally.

 

Serve with baked sweet potato a dollop of butter and a sprinkle of cinnamon!
