BLUEBERRY AND ALMOND BREAKFAST BISCUITS

One of the meals people find hardest to prep for is breakfast and we’ve had so many ask about breakfast ideas on the go. Today we took to the kitchen to whisk up an eat clean breakfast biscuit perfect to nibble on as you go about your morning routine.

 

Here is what you need:

150g Gluten Free Oats

4 Tblspns Coconut Flour

100ml Almond Milk

1 Whole Egg + 1 Egg White

1 Tblspn Almond Butter

Handful of Crushed Almonds

Handful of Blueberries

1/2 Tsp Gluten Free Baking Powder

Agave to sweeten (We added 3 tblspns)

 

What To Do:

Preheat oven to 160C

Line a baking tray with some parchment paper

Mix all ingredients in a large bowl (adding the blueberries last) and scoop large spoonfuls into cookie sized portions on your baking tray. We made 6 large biscuits with this amount.

Bake for 12-15 minutes in the oven.

Allow to cool on a wire tray.
