SHEPERD’S PIE

In the next few weeks I am going to share some of the recipes I use a lot week to week. The first of “Leanne’s Everyday Meals” features my Healthy Shepherd’s Pie. I hope you enjoy! 

 

What You Need: 

2 Large Sweet Potatoes (peeled and diced) 

2 Cloves Garlic (minced) 

1/2 Onion (chopped) 

1lb Round Steak Mince 

1 Cup Frozen Vegetables 

2 Vegetable or Beef Stock Cubes 

Spinach 

Salt and Pepper 

Rapeseed Oil/ Oil of choice

 

 

What To Do: 

Preheat over to 180 C

Boil sweet potato till soft. 

Meanwhile in a pan fry up onion and garlic over a mid heat in oil of choice.

Add mince and fry till browned. 

Add frozen vegetables and mix through for 5 mins. 

Add spinach and allow to wilt stirring in occasionally. 

Add pre-made stock and reduce temperature for 2-3 mins. 

Drain potatoes and mash with a sprinkle of salt and pepper. 

In an oven proof dish – pour meat mix in to the bottom. 

Cover in sweet potato and top with grated cheese. 

Bake for 20 mins. 

Serve and enjoy!
