Loaded Sweet Potatoes

What You Need: 

4 Sweet Potatoes

150-200g Chorizo

1 Onion

3 Cloves Garlic

Freshly Chopped Corriander

Freshly Chopped Scallions

Coconut Oil

1/2 Cup Grated Cheese

 

What To Do:

Roast whole sweet potatoes in the oven until cooked though.

In a pan melt some coconut oil and fry up chopped chorizo, onion and garlic.

Prep the cooked sweet potato – chop in half lengthways and scoop out a little of the potato on each side to give room to fill.

Pop the scooped out sweet potato into a large bowl and mash well. Add the chorizo/garlic/onion mix, when fully cooked, to the sweet potato in the bowl and stir in the coriander, scallions and cheese.

Divide the mixture into the halved sweet potatoes and place in the oven for a further 5-10 mins.

Serve with a meat or fish of your choice!
