Tasty Tomato and Basil Soup


We should all have a recipe we can turn t time and time again for a delicious meal in minutes. Well here’s one you’ll want to earmark! Try our Tasty Tomato and Basil Soup – you won’t be disappointed. 

What You Need: 

2 Carrots peeled and chopped
2 Celery Stalks chopped
1 Large Onion chopped
3 Cloves of Garlic
1 Vegetable Stock Cube
10 cherry tomatoes
3 Tablespoons Tomato Purée
Handful of Basil
Himalayan Pink Salt

Cook carrots, celery, onion and garlic in coconut oil for about 15 minutes on medium heat in big pot or large pan and loosely cover, stirring occasionally with wooden spoon.

When carrots soften, add 1 vegetable stock cube mixed with a litre of water (mix well before adding to pot).
Add the cherry tomatoes, tomato purée, pink salt and pepper. Bring to the boil and then simmer for 10 minutes.

Add Handfull of basil leaves, pink salt and pepper to taste, mix with hand blender and serve!
