Simple Turkey Mince

Here’s a little recipe that is often my “go to” on a weeknight. Simple and delicious!

 

 

WHAT YOU NEED:
Turkey Mince
1 Pepper
3-4 Cloves Garlic
1 Tin Chopped Tomatoes
3-4 Tblsns Tomato Puree
1 Courgette
Sweet Potato or Baby Potatoes
Coconut Oil

 

WHAT TO DO:

Preheat the oven to 180C
Slice the baby potatoes (or sweet potato) and pop onto a lined or greased tray, drizzle with coconut oil and place to bake for 35-40 mins (make sure to rustle them up a few times so they go golden all over!)
Fry turkey mince in a pan.
Add chopped pepper and garlic.
Add GRATED courgette (I literally use the cheese grater to grate the courgette).
Add tin of chopped tomatoes and tomato puree with some salt and pepper to season.
Reduce heat of pan and allow to simmer for 10-15 mins stirring occasionally.
Serve and enjoy!
