Courgetti Carbonara

We’ve become slightly addicted to this little recipe over the past few weeks…. A lovely alternative to a calorie laden carbonara!

Give it a go.

 

What You Need: 

2 Large Courgettes

1 Avocado

15 Brazil Nuts

1/2 Lime

2 Tblspns Olive Oil

6-8 Mushrooms

Himalayan Pink Salt

Water

Mint leaves

 

What To Do: 

Using a spiralizer prepare the courgettes to make your “spaghetti”.

Cut the mushrooms into thin slices and gently heat in a large frying pan with olive oil for about 5 minutes.

Pop brazil nuts into a food processor and blend for 3-5 minutes until they become creamy.

Add avocado, olive oil, lime, mint leaves and salt and blend again.

Gradually add the water as the sauce blends to create exactly the right consistency for you.

Add the sauce and courgette spaghetti to the mushrooms in the frying pan and gently heat for 2-3 minutes.

Serve and Enjoy!!
