Anyone who knows me will know I am a foodie! I love to eat!
Lately I’ve been taking to the kitchen to rustle up some healthy meals which people seem to like the look of – so I thought I’d share some with you here on my website.
The first is a winner all round – a guilt-free sweet treat good enough for breakfast or a delicious snack….. Protein pancakes!
1 scoop whey protein ( I use chocolate or strawberry but other options will work just as well.)
2-3 egg whites
100ml Almond Milk – Alpro Unsweetened.
Almond Flour or ground almonds (to thicken)
Toppings: (** NOTE: all toppings are optional)
PB2 powdered peanut butter (available from health food stores – a powdered peanut butter you mix with water to create desired thickness. It has 85% less fat than jarred butters. I get mine from www.bodyfirst.ie)
1: Melt coconut oil in a pan
2: In a bowl – mix egg whites, protein powder, almond flour and almond milk.
3: Use a ladle to scoop mixture on to hot frying pan to suit the size of pancake you want to make.
4: Flip over to brown both sides
5: Serve with healthy topping of your choice.
