The A Department’s Coconut Curry

This has fast become a favourite in our house, so hopefully it can be an ole faithful eat clean recipe you can reach for time and again.

What you need:
Chicken Breasts
Tin Organic Coconut Milk
1 Red Chilli or Chilli Flakes
1 Red/Green Pepper
1 Cup Brocolli
Asparagus
1 Onion
2 Tblspns Light Soy Sauce
2 Tblspns Agave or Organic Maple Syrup
2-3 Tblspns Organic Curry Powder
1/2 Sweet Potato

Fry chicken in coconut oil.
Chop sweet potato into chunks and boil separately.
When chicken is cooked add onion, broccoli, peppers, asparagus, chilli’s.
Allow to cook over low heat for 2-3 mins.
Add coconut milk, soy sauce, curry powder, agave, and allow cook at low heat for 5-6 mins.
Add cooked and drained sweet potato and cook for a further 2-3 mins.

Serve with Baby Gem lettuce leaves, rice or quinoa and garnish with some flaked almonds!
