Sweet Potato Chocolate Brownies – Yes You Read That Right….!


It’s only Tuesday and already we are planning our weekend “Eat Clean” treat. We think we’ll give these bad boys another outing because frankly they deserve it! Remember this “A” recipe  – of course you do! How could you forget it 😉

You Will Need:
1/2 cup wholemeal flour (We used spelt wholemeal flour)
1/2 cup unsweetened cocoa or raw cacao
1 tsp Cinnamon
1 tsp Baking Powder
1/2 sweet potato (YES! Sweet Potato)
1/2 cup Agave
3 tblsn Coconut Oil
1 tsp Vanilla Essence (we used Goodall’s Natural Vanilla Extract)
6 egg whites

Pre-heat oven to 170C or 350F
Mix flour, cocoa, cinnamon and baking powder in a bowl.
Blend sweet potato, Agave, Coconut Oil and vanilla essence in a food processor.
Gradually add wet mixture to the dry mixture in a large bowl.
Separetly whisk 6 egg white till fluffy.
Fold egg wites into your batter with a rubber spatula.
Spread on an oil lined or grease-proof paper lined tin.
Bake for 18-20 mins.
(**TIP: check if centre is fully cooked by prodding with a tooth pick!)

Serve cold with a cuppa or warm with some greek yoghurt and berries!
