On the menu today are these delicious Sweet Potato Chocolate Brownies. Pop the kettle on and enjoy!
What You Need:
1/2 cup Wholemeal Flour
1/2 cup Raw Cacao
1 tsp Cinnamon
1 tsp Baking Powder
1/2 Sweet Potato
1/2 cup Agave
3 tblsn Coconut Oil
1 tsp Vanilla Essence
6 Egg Whites
What To Do:
Pre-heat oven to 170C or 350F
Mix flour, cocoa, cinnamon and baking powder in a bowl.
Blend sweet potato, Agave, Coconut Oil and vanilla essence in a food processor.
Gradually add wet mixture to the dry mixture in a large bowl.
Separetly whisk 6 egg white till fluffy.
Fold egg whites into your batter with a rubber spatula.
Spread on an oil lined or grease-proof paper lined tin.
Bake for 18-20 mins.
(**TIP: check if centre is fully cooked by prodding with a tooth pick!)
