SWEET AND SAVOURY SALAD

A delicious dinner option, ready in minutes and healthy to boot. This sweet and savoury salad is a delicious main course, lunch or side dish. 

 

What You Need: 

2 Sweet Potatoes (peeled and cubed)

8-10 Strawberries (sliced)

10 Cherry Tomatoes (quartered) 

1/3 Cup Pecans (crushed)

1/3 Cup Feta Cheese (crumbled)

1/2 Red Onion (cut finely)

1/2 Bag of Spinach

Ground Coriander

Ground Cinnamon

Coconut Oil 

 

For The Dressing:

6 Tblspns Balsamic Vinegar 

2 Tblspns Extra Virgin Olive Oil

1 Tblspn Honey

 

What To Do: 

Preheat the oven to 180C and place prepared sweet potatoes on to a baking tray with 1 tsp coconut oil and sprinkle with coriander and cinnamon. Allow to bake for 20-30 mins shaking occasionally. 

Prep all salad ingredients and pop into a large salad bowl – spinach, cherry tomatoes, strawberries, red onion, feta cheese, pecans. 

Prepare dressing in a glass or jug. 

When potatoes are cooked, add to salad, add dressing and toss well.

Delicious when served with a juicy steak!
