FAKEAWAY BURGERS AND CHIPS

Fakeaway Burgers and Chips: Looking for a simple healthy recipe you can make at home? Why not try my Fakeaway Burger and Chips, complete with a zingy homemade salsa dip. Try these Turkey Mince Burgers in Walnut and Kale Pesto! Delish!

 

What You Need:

(Walnut and Kale Pesto)

1/2 Cup Walnuts

3-4 tblspns Olive Oil

1 Bunch Kale (with stalk removed)

Juice of 1/2 Lemon

2 Cloves Garlic

Himalayan Pink Salt and Pepper

 

(Salsa)

1 Red Chilli

10 Cherry Tomatoes

1 Red Onion

Juice of 1 Lime

3 Tblspns Tomato Puree

 

(Other)

Turkey Mince (or lean minced beef)

1 Green Chilli

1 Egg whisked

1 Sweet Potato

 

What To Do: 

Preheat oven to 180C

Start with the Walnut and Kale Pesto. Blend walnuts and garlic in a blender and mix in olive oil, lemon juice and kale. Blend till thoroughly combined. Add some Himalayan Pink salt and black pepper to season. (Add extra oil if mixture is not moist enough.)

Pop mince meat into a large mixing bowl and add one finely chopped green chilli.

Mix in pesto with your hands till mince is well covered (it should be quite moist).

Roll mince into small flattened balls and dip in whisked egg to coat entirely making sure they are nice and moist.

Place on a lined tray and pop in the oven for 15-20 mins.

To make the salsa simply chop chilli, tomatoes and onion roughly and pop in food processor.

Add juice of 1 lime and tomato puree. (Add as much tomato puree as you desire to get the level of flavour you wish).

Serve burgers with some spicy sweet potato chips (we pre-boiled the sweet potato and fried in coconut oil, garlic and cayenne pepper).

A perfect weekend treat without a trip to the chipper.
