A delicious sweet potato and chicken curry. The sweet potato blended into a sauce makes the curry thick and creamy! Just delicious. 


What You Need: 

2 tsp Coconut Oil 

Sweet Potato


1 tsp fresh grated ginger

2-3 cloves fresh minced garlic

1 tsp coriander

1 tsp Cumin 

1 tsp Chilli Powder 

2-3 tsp Curry Powder

Freshly Chopped Peppers

1 Can Light Coconut Milk 


What To Do: 

Peel and cut sweet potato into cubes and boil.

Meanwhile for the sauce, in a pan fry 1 tsp of coconut oil. Add onions, ginger, garlic, chilli, coriander, cumin and curry powder. 

Add a little water (about 1/2 cup). 

Pop mixture and boiled potatoes and can of light coconut milk into a blender and blitz thoroughly.

In a separate pan fry chicken in second tsp of coconut oil. 

Add peppers. 

When chicken is cooked add the blended mixture and allow to simmer for 5-7 minutes. 

Serve with rice and freshly chopped coriander.
