This is one of my favourite ideas for breakfast, lunch or dinner and one I always get asked about. Delicious and quick – here’s my Omelette With A Twist recipe! 


What You Need: 

1 Onion (diced) 

2 Cloves Garlic (minced) 

1/2 Cup Chorizo (diced)

4 Eggs

2 Egg Whites 

1 Large Sweet Potato or 1 Cup Baby Potatoes (Peeled and cubed) 

Himalayan Pink Salt 

Rapeseed Oil 


What To Do: 

Boil the sweet potato cubes in a pot with a pinch of salt. 

In a large pan fry onions and garlic in a drop of oil. 

Add chorizo and continue to cook over a medium heat. 

Strain potatoes when soft and add into pan tossing them gently for 3-5 minutes. 

Reduce heat and crack in four full eggs plus two egg white and gently cook till the under neath is solid. 

Pop the pan under a medium heat in the grill for 2-3 minutes to gently cook the top layer of egg. 

Serve straight from the pan
