Dark Chocolate and Almond Bites


Sometimes we all need something sweet with a cuppa and these are one of our favourite biscuit bites. Make a batch and store them in an air-tight box for something tasty to reach for as a treat when you fancy. Clean treats should still be classed as a little cheat – but having these stashed in the fridge will keep you from making poor choices. And they’re tastier too 🙂

You will need:
1 1/4 cup Oats
1/2 cup Wholemeal Spelt Flour
2 tbspns Flaxseed
1 tspn Cinnamon
1/2 tspn Baking Soda
1/2 cup Agave
I Egg White
2 tspns Almond Butter
1 tspn Vanilla Essence
8 crushed squares 85% or 90% chocolate
12 crushed Almonds

Preheat oven to 350F or 175C
Line two baking trays with grease proof paper.
Mix oats, flour, flaxseed, cinnamon, baking powder in a large bowl.
In a smaller bowl mix agave, egg white, almond butter, vanilla essence.
Add wet mixture to dry ingredients mixing well.
Add crushed chocolate and nuts.
Mix thoroughly.
Separate onto grease-proof paper flattening down each cookie bite.
Cook for 9-10 mins till golden brown.
Cool on a wire tray for ten minutes.
