A Little Pizza Goodness….


So it’s Friday night and more than a few of us may be contemplating popping a call to the local pizzeria. But before you do – cast your eyes over this little recipe – it may be exactly what you are looking for. Cauliflower Crust Pizza.

What You Need:

1/2 Head of Fresh Cauliflower

1 Large Egg

3/4 Cup Grated Mozerella (light)

2 Tblspns Grated Parmesan

Himalayan Pink Salt and Black Pepper (to season)

1/4 Cup Tomato Puree

Toppings of choice

What To Do:

Preheat oven to 200C and line a rimmed baking tray with parchment paper.

Grate fresh cauliflower using a box grater.

Place in a large bowl and microwave for 7-8 minutes till soft.

Remove and let cool.

In a separate bowl mix egg, half of the mozzarella, parmesan, salt and pepper. Add to the cauliflower and transfer mixture into the pre-prepared baking tin patting it down. Spray lightly with low calorie spray and bake for 10-15 mins till golden brown.

Top your pizza base with tomato puree, the remainder of the mozerella and your favourite pizza topping.

Pop back into the oven for a further 10 minutes.

Slice and serve.
