Eating clean foods doesn’t mean passing on some of your favourite treats. For me a weakness is ice-cream and passing up a tempting dessert isn’t always an easy option. If dessert is your demon, here’s a little treat that won’t have you setting out on a little guilt trip every time you reach the bottom of the bowl. Strawberry Ice-cream – A Department style!
What You Need:
400g Frozen Strawberries
400g Greek Yoghurt
2 Tspns Xylitol
Blend strawberries and greek yoghurt in food processor till completely smooth.
Add chopped banana and two teaspoons of xylitol.
Blend again for 1 minute.
Transfer into a tupperware container and pop in the freezer for 2-3 hrs.
**NOTE: this eat clean ice-cream is almost nicer when not completely frozen.
Whilst this little recipe is perfectly sweet on its own, I do like to add a little bite. Add a little topping to the mix by sprinkling with crushed almonds, pomegranate seeds and a little coconut or even venture to some raw cacao nibs to create your own “Ben and Jerry’s” style treat.
