Cacao and Coconut Delights – Being nuts about coconut helped the matter but we weren’t quite prepared for the complete awesomeness of what we were about to whip up. Try them out for yourselves – they’re goooooood!

Cacao and Coconut Delights

What You Need:

(Coconut)

1 Cup Coconut Milk

3 Tblspns Coconut Oil

2 Cups Desiccated Coconut

4 Tblspns Agave Syrup

Pinch of Himalayan Pink Salt

(Coating)

1 Cup Coconut Oil

1/2 Cup Raw Cacao

1 Tblsn Agave Syrup

Place coconut milk, agave and coconut oil in a saucepan and combine all ingredients together.

Stir in desiccated coconut.

Line a tray with greaseproof paper and spread mixture out evenly then pop it in the fridge till coconut sets (approx 1-2 hours).

Cut the filling into bars and cool in the freezer until very cold (approx 1-2 hours).

To make the coating melt the coconut oil in a pan and add cacao and agave till completely smooth.

Dip coconut bars in to chocolate mixture coating them entirely.

We dipped the bars a second time to make sure they had enough chocolatey goodness!

Now stick the kettle on and enjoy!
